The elongated, dense, flower spike of this heirloom variety looks like an elephant head trumpeting skyward. The large, red-purple flower heads measure 10-12" long. Plants can grow 1-5 feet, depending on fertility, and have green foliage with a red blush. The tiny seeds can be popped or cooked like a grain, and the tender young leaves make a nutritious green. The side shoots make a great cut flower. Amaranth is a tender annual that likes full sun and has moderate water requirements.
